Key Lime Cupcakes with Graham Cracker Frosting
1 1/2 cups cake flour
2 tsp. baking powder
pinch of salt
1/2 cup butter
1 cup sugar
3 eggs
1/2 cup sweetened condensed milk
3/4 cup key lime juice
In a small bowl combine flour, baking powder, and salt
In mixer cream butter and sugar together
Mix in eggs one at a time
Mix sweetened condensed milk and key lime juice into wet ingredients
Add flour mixture to wet ingredients
Divide into cupcake liners
Bake 350 fro 30 mins. Centers may still be wet, that's normal they will set as they cool.
Graham Cracker Frosting1/4 cup butter
8 oz cream cheese
2 cups powdered sugar
2 tsp vanilla
1/3 cup key lime juice
1 1/3 cups crushed graham crackers
Mix cream cheese and butter. Mix in all other ingredients, adding powdered sugar a little bit at a time.
Pipe onto cooled cupcakes!
